Einkorn Wheat vs Modern Wheat
I love to experiment with different ingredients in the kitchen, and one that I've been using a lot of lately is Einkorn flour! I sought out this grain after trying to find alternatives to the standard modern wheat which for me is hard to digest and results in many negative side effects. Achy joints, bloating, constipation, increased body fat, eczema, and low energy are the primary symptoms.
Einkorn wheat has a completely different genetic makeup than modern wheat. This results in a significant difference in the amount and type of gluten protein in the grain. Einkorn contains less overall gluten, and the structure of the gluten is easier to digest, which, for many, will eliminate the gluten sensitivity symptoms that are triggered by ingesting modern wheat varieties. Besides that, einkorn wheat also contains higher amounts of beneficial vitamins and minerals than your standard all-purpose flour.
Einkorn Flour Pancakes
The following is a very simple recipe for making einkorn pancakes. It does require that you already have some sourdough starter, though. To learn how to make your own, I would suggest checking out this guide from Jovial Foods. It requires some patience, but it is easy to maintain once you get it going.
This is one of those recipes where I don't use any exact measurements. I just mix some leftover sourdough starter with enough additional flour and water to get a pancake batter consistency. As a rule of thumb, the less water the batter has, the thicker the pancakes will be. and I let it sit overnight or for at least 4 hours. Then I'll add 1-2 eggs depending how big of a batch I am making.
Next, I'll heat a skillet or griddle and coat with goat butter. Once hot, I'll pour in enough batter to make about a 6" diameter pancake. They only need to cook for a minute or two on each side, depending on how hot you have the skillet. Once you see the batter starting to make bubbles, you know it is time to flip.
Once they are done, top maple syrup and butter. For more variety, feel free to add berries, whipped cream, chocolate chips, almond butter, chopped pecans or walnuts, a fried egg, or whatever else your heart desires! You can't go wrong!
